Baked Chicken

Love to use Chicken with skin and bones. We find the flavor so much deeper. So, place chicken in a glass casserole dish with olive oil. Slather it all over by rolling the chicken to get covered completely in oil. One half of teaspoon of olive oil per pound of chicken. This also helps in the non-stick of the glass casserole dish or whatever vessel you are using. Sprinkle with Mikey's Sea Salt, Black Pepper and Garlic plentifully. Always immediately after preparing your chicken, add to your oven to bake. Baking a whole chicken, at a higher temperature for a shorter time for a crispy skin. Also baste halfway through cooking. Bake uncovered until juices run clear. Preheat oven to 425*. Cook uncovered for 50-60 minutes. Check for 165* doneness. Pieces of chicken takes less time, however I find basting half way through gives just as a crispier skin as a whole chicken or pieces. Let Chicken sit for 10 mins to absorb the delicious juices before cutting and enjoying your smoky flavored chicken, DELISH!
